Late Night Harris Teeter Trip

I ended up going out to Harris Teeter around 9pm last night because I had to take advantage of the Aunt Jemima B1G1 deal because I had a $2 off coupon (meaning I got 2 boxes for .50 cents!) and Kelly gave me a $10/$30 purchase that expired yesterday.  Here is what my trip looked like:

I am pretty pleased with how little I spent last night!  I was able to take advantage of the B1G1 Frozen Chicken Breasts, which will hold me over for at least a couple of weeks as far as chicken goes and I have easy breakfasts for weekdays now that will also last a couple of weeks.  I heart coupons!

It's Monday - LE SIGH!

This Monday is actually better than a normal Monday because I have the week off from posting for classes and I get to look forward to having a relaxing weekend at Lake Anna with NO ANATOMY CLASS ON SUNDAY!  Holla!

I had a wonderful weekend with my ladies (FAB FIVE) and some additional party crashers.  I made some food that I was very proud of and will give some recipes this week!

I have a lot to get done this week before I have a refreshing weekend away:

- Menu Plan!  I hope to get my menu all planned out by tomorrow evening.  I still have some food and meals left to make, so I have a little bit of time.
- Coupon Binder.  I decided to switch up my coupon organization to a binder, which is proving to be more daunting than I thought.  I hope to have it all organized and all my new coupons clipped by the end of the week.
- Grocery shopping.  I still have to scope out the best deals this week, but I know I'll be making a trip to Wegmans because I realized they have the best deals on chicken and beef (only $1.99/lb!) and canned veggies (0.34 cents/can!) AND Harris Teeter is a definite because they are my fav store ever.
- Drugstore Games!  I am planning to add Walgreens and Rite-Aid to my Drugstore game this week.  I have mastered CVS and would LOVE to start getting free stuff from Walgreens and Rite-Aid, too!
- School Stuff.  Even though I'm on Spring Break from school, I still have a presentation to prepare for and I need to set up my weekly plan for my English course so I can stay on track.
- Chores this week.  Laundry (how in the heck do we have so much?), change sheets in 3 bedrooms, bathrooms (again?  I feel like I just did these!), baseboards (this is a BIG maybe).

Okay, this was a boring post.  When I get my Coupon Binder all organized, I'll show you guys!  I know I have a good handful of readers who are just as coupon crazy as I am!

Easy Peasy Beefy Burritos

I couldn't find the 'open' burrito view!  DANG!

Inspiration and 'How to fold a burrito' came from Pie Birds, Buttons, and Muddy Puddles.

You will need:

1lb Ground Beef (or turkey or boca for my sis)
1 can Black Beans
3 tbsp Chili Powder
1 can Rotel Tomatoes and Green Peppers
2 cups Shredded Cheese
1 tsp Cumin
12 Flour Tortillas

Preheat oven to 400 degrees.  Brown Beef.  Drain

Return Beef to pan and add Cumin and Chili Powder.  Add Rotel and Black Beans.

Add about a spoonful to each burrito and top with cheese!

The Thursday Push!


Ladies and Gents:

We are once again nearing the end of the week - HOORAY!  I, for one, have been in need of some serious encouragement.  Thankfully, next week is Spring Break, so I get a week to relax from school, but then I start 2 new classes on top of the online course I started this week.  Talk about some serious a n x i e t y - I'm getting heart burn just thinking about it.

Luckily, I have some really great friends that push me pretty hard to keep going.  In addition, I have some really great friends that inspire me on a daily basis. 

As I've grown, I've realized that friendship comes in many different forms:

I've got the ladies that have restored my sanity since our 'reunion' a.k.a. The Fab Five (Amanda, Ott, Twitty, and Christy).

I've got acquaintances/turned FB friends.  Okay, these are the girls that I've briefly met in 'real life' that I have sort of become a FB (Facebook) stalker of - what up Jessie and Julia!

I've got my beloved 'Mom' friends who have come back into my life and I relate to mostly because we are moms - Sarah!

I am SO lucky to have my family friends (the ultimate always-there-for-you) - Biological AND Pseudos - Nenny, Buddy, Hinny, Rachey, Tyler, Chasey, Kellee, Daddy, Bernie, Twitty (you are included in 2 categories of friendship- AWESOME), Kelly, Brittany, Marc Farkle, Georgie, Leesy, Shanny, J.Vincent, Krista, Jenny, Justin, Denisey, Robert, Leanne, Cricket, April, Michelle, Laura  and the list goes ON AND ON AND ON.

And BIG STEVE, LITTLE STEVE, AND MY MAMA - the ultimate BFFs.

I used to always think it was true that the 'real' friends in your life you'll be able to count on one hand.  Too bad I have a bazillion cousins and I'm pretty sure they're all my 'real' friends.

So, what's the point of this post besides the fact that I have a huge family?  Well, I have learned that it's okay to lean on other people to 'get by.'  There is nothing wrong with admitting you need help and needing someone to push you.  Many of the people listed above have helped me get through so much and I have also had the privilege of being there for them as well. 

How lucky am I to have so many wonderful people in my life?

I watched the last bit of American Idol last night and the song, 'I'll Stand By You' was performed and sort of inspired this post...and made me cry like a baby.

So, to my friends of all kinds:

Homemade Oreos!


This was NOT my recipe, but they turned out delicious!  The cookie part wasn't exaclty Oreo, but the filling was spot on.  Overall, there were a huge success and I definitely plan to make more - mostly because I've gotten some requests for them!

Easy Peasy Cheesy-Beefy Biscuit Cups

Don't judge a book by it's cover!

Now, these didn't turn out as cute as I wanted them to because I didn't 'smoosh' the biscuits around the muffin tin enough, but they still turned out delicious!  Even my niece loved them (she had 2!) and she is quite a picky gal.  These are super easy, super kid friendly, and super yummy.  Helloooooo crowd pleaser!

 You will need:

1 lb ground beef
16 refrigerated biscuits
2 cups cheese
1 jar spaghetti sauce

Preheat the oven to 375.

Brown the beef, drain.  Stir in Spaghetti Sauce.

Generously spray muffin tins - get the sides good so these come out as cups like intended.  'Smooooosh' the biscuits into the tins.  Fill 2 tbsp of meat mixture in cups and bake for 15-17 minutes.  When they come out, sprinkle cheese all over and let it melt!

I served these with macaroni because mac n cheese is a no-fail with most kids.  I gave the option to have salad or peaches.  Here is Mrs. Picky herself:

Yes, that was way too much mac n cheese, so she traded half of it in for another Cheesy-Beefy Biscuit Cups.

I found a basic recipe for this on Allrecipes.com (one of my all time fav sites) and you can switch it up so much - add veggies, swap meat, go meatless - easy peasy!
