crock pot sweet & sour bbq pork bits.



Sweet & Sour BBQ Pork Bits
1-1.5 lbs Bone Out Pork Chops
1/2 bottle Franks Sweet & Chili Hot Sauce
16 oz Grape Jelly
2 cups Frozen Corn

Are you ready for this?

Place your Pork Chops (can still be frozen!) in the bottom of your Crock Pot.
Add your Franks Sauce and Grape Jelly
Cook on low for 6-8 hours.

Add Corn 1 hour before serving.
Cut into bits and serve with a starch (we had potatoes).
By the time these are finished, you can cut the Pork with a wooden spoon.  They are THAT tender.

That's it.
No, seriously.

Crock Pot Ranch House Pork Chops.

I first saw the recipe for these on Pinterest and decided it was necessary to try.
SOOOO glad I did.


You know how I feel about crock pots.
They make everything easier and tastier, especially with pork.
Pork tends to be tough, but the crockpot makes them so tender and moist!

Crock Pot Ranch House Pork Chops
adapted from: Picky Palate

1 lb Pork Chops - boneless
1 packet Ranch Dressing Mix
1 can Cream of Chicken Soup (or make your own like I do in a pinch)
1/4 cup Milk
2 cups Frozen Peas (optional)

Mix your Ranch Dressing Mix, Cream of Chicken Soup, and Milk together and pour over Pork Chops in crock pot; your Pork can be frozen or thawed, that's the beauty of a crock pot!

Turn that bad boy on low for 6 hours and be done with it.
I added some Frozen Peas for about 20 minutes and served it with my Homemade Mashed Potatoes and it was super delicious.

This one will defintely make the menu again in the very near future.

crockpot cocktail meatballs.


So, I tried a little bit of a different recipe than I normally do. 
I also cheated a little because I bought frozen meatballs.
Don't judge, I was on a time crunch!
They turned out pretty yummy for an on-the-spot recipe.

Crockpot Cocktail Meatballs
1 bottle Franks Sweet Chilli Sauce
2 bags Frozen Meatballs
1 32 oz jar Grape Jelly
3/4 cup Worchester Sauce

Throw it all in the crockpot and cook on low for 4-5 hours.

Chicken Shepherd's Pie w/ Homemade Mash + Harris Teeter Trip.

Shredding chicken in the crock pot is the easiest, yummiest way to make virtually any type of chicken dish.   I really wanted Homemade Mashed Potatoes, so I decided on a pseudo Shepherd's Pie.



You Will Need:
1-1.5 lbs Frozen Chicken
1 cup Chicken Stock
2 cups Frozen Corn
2 tbsp Garlic Powder (if you love it like I do)
2 tbsp Parsley
S&P to taste

8 Small Potatoes
3 tbsp Butter
1.5 cups Milk
1/2 cup Parmesan Shredded Cheese
2 cups Shredded Cheddar
S&P to taste

For the Chicken Part:
Add your Frozen Chicken, Chicken Stock, Garlic Powder, Parsley, and S&P to the crock pot and cook on high for 4-5 hours.  Stir in Frozen Corn in the last 30 minutes or so.

For the Mashed Potatoes:
Peel and dice Potatoes and add to a big pot of water; allow to boil until soft.  After draining your soft Potatoes, add them to a large bowl with your Milk and Butter.  I use a cheap-o hand mixer to get the job done faster and then add the Parmesan and S&P at the end.

Preheat your oven to 350.  Using a large spoon with holes to transfer 1/3 of my Chicken to a baking dish - you don't want it runny, but a little moisture is delish.  Layer 1/3 of the Mashed Potatoes on top of the Chicken and top with 1/3 of the Shredded Cheddar.  Continue until done and pop that baby in the oven for 15-20 minutes.

And then, you nom.

And then you go shopping at Harris Teeter for Triples and get some solid items that'll last a whiiiile.  Like so:

Crockpot Shredded Chicken Tacos

If you don't have a crockpot or don't use yours regularly, get out of my life.  Kidding, but please take advantage of the wonders a crockpot can perform!  It's a total time saver and tastes home-cooked every time. 



Big Steven was kind enough to pile his plate with two different ways to enjoy the Shredded Chicken I made.  Look at that versatility, folks!  It's topped with some more salsa for extra spunk.

Crockpot Shredded Chicken Tacos

1.5 lbs Chicken ( I even started with Frozen Chicken!)
22 oz jar of Salsa (more or less would be fine)
2 cups Frozen Corn
1 can Cream of Chicken Soup
2 bags Minute Rice

Place Chicken in Crockpot (again, mine was frozen and it worked just fine).  Mix together 1/2 jar of Salsa and Cream of Chicken Soup; pour over Chicken.  Let this cook on High for about 4 hours.

After the 4 hours is up or when you get home from work, return the cooking to a Low heat and mix in the remainder of the Salsa as well as your Frozen Corn and Rice.  The Rice will cook perfectly in this mixture.  Allow this to cook on Low for another hour or so.

I served Steven the Chicken in a Soft Taco and also over some Tortilla Chips.  Your choice :).

Easy Peasy Crock-Pot Chicken & Dumplings

I haven't figured out how to make delicious food aesthetically appealing yet...
 Props to Mommy's Cooking Adventures for the recipe.

You will need:
Chicken Breast (or your favorite part of the chicken)
2 Tbsp Butter
1 Sweet Onion (of course, I opted out)
2 Cans of Cream of Chicken
1/2 Cup of Water
1 Large Can of Biscuits (8 or 10)
Salt & Pepper to taste

First, add the Butter, Cream of Chicken, and Onion to the Crock Pot and stir until mixed.  Add Chicken (cut up into equal sized peices to ensure proper cooking) and add the water to cover the chicken.  Set Crock Pot on HIGH and cook for 6 hours.  30-45 minutes before serving, cut unprepared biscuits in half, roll them and add them to the Crock Pot.

This was so delicious and so simple!  I will definitely make this again.
