skillet pork chops w/ pipette noodles & spinach.


Skillet Pork Chops w/ Pipette Noodles & Spinach

1ish lb Pork Chops
1 can Cream of Mushroom Soup
2 Chicken Bouillon Cubes (optional)
2 cups Frozen Spinach
1/2 box Pipette Noodles (or whatever)
1/2 cup White Cooking Wine w/ Lemon (also substitutable or optional)
EVOO
Salt & Pepper to taste

Heat your EVOO on medium heat.  While it's heating up, season your Pork Chops; I use Jane's Krazy Mixed Up Seasoning (the Original Salt) because it has SUCH great flavor.  Add the Pork to the skillet when it's nice and hot and add your Chicken Bouillon Cubes.  I used Chicken Bouillon for extra flavor; they're inexpensive and last a while and just make the quality of the meal so much better.  Cook Pork about 4 minutes on each side.

Meanwhile, cook your Pipette Noodles according to package instructions.  

Optional:  Transfer drained noodles into a skillet and add your Wine; allow to cook for only 2 minutes or so and remove from heat.

When the Pork has been cooked on both sides, remove it from the pan and add your Cream of Mushroom Soup.  Wisk the soup with the remaining juices and Bouillon from the Pork - he sure to scrape the pan a little to get all that yumminess and to avoid burning.   Once a gravy like consistency is formed, add the Pork back to the pan and cover; allow to simmer for about 5 minutes.

After the Pork is all good and covered with the 'gravy,' add your Pipette noodles and Spinach.  Cover and turn heat to low/medium.

Smoked Sausage w/ Spinach Cheese Potatoes

Before I give out the goods, I have to say I have for real beef with my camera charger.  You know, the one that took a few times to order the right one after I lost the original?  Well, he's decided to stop working, so I'm trying to ghetto-fy it to see if I can do something to get him back in action.  MEN!

Anyways, you have to deal with the horrid pictures from my dinosaur phone.



The worst part about the lack of photo quality is that y'all can't see how good this really was. 

Smoked Sausage w/ Spinach Cheese Potatoes

1 pkg Smoked Sausage (cut into thin slices)
3 tbsp Flour
1/4 cup Butter
1 1/2 cups Milk
8 oz Shredded Cheese (I used Cheddar)
10 oz Frozen Chopped Spinach
5 cups Potatoes (peeled and thinly sliced)
Additional Cheese for topping, if desired.

Preheat oven to 350 so it's ready when you are.

Melt the Butter in a pan on med-low heat.  Mix Milk and Flour together and slowly pour in to the heated Butter, stirring constantly.  Bring mixture to a boil then add Shredded Cheese and continue stirring constantly.  Remove from heat when Cheese has been mixed in and stir in your Frozen Spinach. 

In a baking dish (lightly coated with non-stick spray) add 1/2 of your Potatoes and 1/2 of your Sausage.  Top this off with 1/2 of your Spinach and Cheese sauce.  Repeat the layering and bake for 45 minutes covered with aluminum foil.  Remove foil after the 45 minutes, add more cheese for topping (if desired) and bake for an additional 30 minutes.

Pasta Florentine

Please do not ask me what makes it 'florentine' because I have no idea.  It was exceptionally delicious, though!



pardon my french, but this is some legit sh*t.
 What you'll need:

1 -1.5 lbs Chicken, sliced into strips 
2 cups Frozen Spinach
1 can Evaporated Milk (or Heavy Cream, which is higher in cals,  but I won't judge you)
3 cloves Garlic
1 box Pasta
1 Tbsp EVOO
1 jar Spaghetti Sauce

I totally cheated.  I used frozen breaded chicken and baked it according to the package.  DON'T JUDGE ME!

Boil your noodles until al dente.  Heat up the EVOO in a pan and add your chopped up Garlic.  Garlic tastes so yummy when you heat it first; it brings out the flavor!  Add the spinach and heat through.  Add your Milk and Spaghetti Sauce and bring to a boil.  Reduce heat to low and add cooked Noodles and cooked Chicken.

Done and done and super delish!

The Long Lost Recipe: Potato, Chicken & Spinach Lasagna w/ Homemade Alfredo Sauce!

This was such a yummy dish, I'm surprised I overlooked it for so long!  That's what happens when you get caught up in this whole 'life' thing ;).



Alfredo Sauce:
3 tbsp Butter
8 oz Heavy Cream or Evaporated Milk (less cals)
1 tsp Nutmeg (my fav spice!)
1/4 c. Parmesean cheese + 3 tbsp for later
2/3 c.  Mozarella cheese
1 Egg
S & P to taste!

Melt the butter in a pan over medium heat (you don't want to burn it!).  Add the cream/evaporated milk and stir until blended.  Stir in nutmeg, 1/4 c. parm. cheese and all of the mozarella and salt & pepper to taste.  Stir until melted then mix in the egg and simmer over medium heat for a bit (5 minutes).  Top with additional Parmesan and keep warm!

Potato & Spinach Lasagna
Alfredo Sauce (you can also buy a jar)
1 cup Milk
10 small potatoes, sliced - you can peel them, but I like the potato peel
5 tbsp grated Parmesan Cheese
More S & P to taste!
1 package Frozen Spinach, thawed
2 cups additional cheese (I used 3 Blend)
3 cups Sliced chicken (I cheated and used Tysons Frozen Chicken Strips)

Preheat your oven to 400.

Combine the Alfredo sauce with additional milk and put about 1/4 - 1/3 of the sauce in the bottom of a grease baking dish.  Layer 1/3 of the potatoes and sprinkle with Parmesan cheese.

Combine your Spinach and additional cheese (again, I used 3 Blend) and spread 1/3 over the Potatoes in the dish.  Then top with another layer of potatoes, parm. cheese, and spinach/cheese combo.  Do this again and pour the remaining alfredo sauce over it.  Bake for 45 minutes covered with foil.  Then uncover and bake for an additional 20-30 minutes.

DELICIOUS!
